Cati herself speaks of 'rediscovered' because she grew up with the culture and taste of ham. In Huelva, the province where she lived, she spent a long time on her grandparents' farm, where they bred pure Iberian pigs and where they prepared and preserved the legs in the traditional way.
The Dutch's ignorance of the production of Spanish hams and their delicious flavors and variations, together with Cati's enterprising nature and her passion for teaching and sharing, has made her a true ambassador of Spain's most international product in her country of adoption.
