Prodeo Ham carving teacher course in Spain

As I have already mentioned in previous posts, I am a member of a Spanish association of the Ham world, an association formed by people who protect and spread the culture of the ham: AGACUJ.

One of the activities we have been carrying out every year since then from the social action department is a charity course.

More than 150 people gather at a winery in Chiclana de la Frontera (Cádiz) to learn how to carve ham.

During 4 days we have very enriching experiences and share very special moments with all the people who attend the course and all the colleagues we meet there, speakers, monitors and enthusiasts of this sector.

Some professional Cortadores from AGACUJ will collaborate as teachers on this valuable initiative and support this training with our experience and knowledge. We donate all funds we raise to the Reyes Magos de Chiclana Association for the No Child Without Toys campaign.

In the next video you will see one of the moments when I explain to my students the importance of leaving enough fat in the leg when cleaning the ham, the importance of the stability of the ham because it gives us safety when cutting ham and how to place the knives to make it neat and comfortable.
